Welcome Back to What's Cookin' Wednesdays!


On my first blog Croissant Craic I did my best to devote one post every other week or so to what I was serving up in my kitchen.  I tried to publish these post on Wednesdays, hence the name "What's Cookin' Wednesday". It was recently brought to my attention that I don't cook the same now as I used to in Ireland. Well, no dear husband I don't. There just isn't always enough time during nap time to hand roll gnocchi, or bake homemade cheese-it crackers, or whip up hand dipped salted caramel truffles just because. 

Of course in Ireland I wasn't working and I didn't have children at the time, so devoting myself to new fancy and fun things in the kitchen came a little easier. While I am still not working now, I am 7 1/2 months pregnant and chasing a busy 18 month old on a daily basis. So even though it is not technically working in the sense that I'm being paid, I think many people would agree that it is a job nonetheless. I just get paid in hugs and smiles which is wonderful, but cash would be great too!

I will try to make these What's Cookin' posts blog worthy, but some days Costco Pizza or a simple big salad are all that make it to the dinner table. Even this post is a dish made from leftovers, but I felt it was tasty enough to share anyway! So without further ado here is what's cookin'.

Steak Sandwiches on Toasted Garlic Ciabatta with 
Peppers Onions, Arugula, and Horseradish Sauce. 

I had half of a grilled flank steak leftover from the night before just hanging out in the fridge waiting for its second chance at deliciousness. 


The options for leftover steak are plentiful, but ultimately I settled on sandwiches after being offered this wonderful arugula from my friend Alissa's garden. 


I should have snapped a few shots of her garden while I was over at her place collecting this yumminess. She has quite the variety of tasty homegrowns and 8 different fruit trees to boot! I'm so jealous! But back to the arugula, I just knew it would add the perfect fresh and peppery bite to these tasty dagwoods.

First I sliced the steak very thin and against the grain and set it aside. I sauteed up vidalia onions and red and yellow bell peppers in a little olive oil until soft. I then pushed the onions and peppers off the side and warmed the sliced steak through in the same pan just enough without overcooking it.


While the steak was warming up I was preparing the ciabatta bread by brushing the cut sides with a little garlic infused olive oil, which I had made earlier by simply sauteing one minced garlic clove with about three tablespoons of oil for just a minuet or two. Just watch so you don't brown the garlic!


After toasting the bread with the garlic olive oil on it under the broiler I added a generous spread of horseradish sauce to both sides. I made this sauce with jarred horseradish, mayo, and sour cream all mixed together to taste. Sorry, no exact measurements. I'm a taste-as-you-go kind of gal, especially with something so flavor and heat intense like horseradish! I also made this ahead and just stored it in the fridge until I needed it.

Next I stacked up all the yummy warm steak peppers and onions on one side of the bread. It was then I decided this sammy could use one more layer of flavor and so I squeezed a little balsalmic glaze right on top. There are many varieties of these glazes now available in most grocery stores. It added just the right amount of sweet and tangy to the savory steak and veggies.


I topped these layers of flavor with one last layer of flavor, the peppery arugula, and finally slapped on the top piece of ciabatta, and voila!


I served the sandwiches with a side of homemade sweet potato fries which are a favorite of my toddler. Just peel and cut a sweet potato into nice even pieces. Toss with salt pepper and a little olive oil and bake for 25-30 minuets at 425 flipping once or twice until crispy.


There you have it. An easy-peasy weeknight dinner made from last night's easy weeknight dinner! It may not be fancy, but it sure is tasty!
